If your household is anything like mine, then breakfast is usually the only meal where we are all in the house together consistently. During the day, the kids are at school, so lunch is always had separately. Dinner is not always a family affair since I'm in the restaurant biz. That means, I spend many nights at the restaurant during dinner. So breakfast is really the only meal where we eat together the most often. That means I have to get creative every morning. My kids are spoiled when it comes to food. They like variety, which means cereal or toast with eggs better not be on repeat. Recently I rediscovered a breakfast sandwich I use to make on the regular while perusing the Trader Jo's cheese section. I saw pesto gruyere and instantly thought my kids will love the green color. I've managed to trick my daughter into thinking green means power because of a tv show she loves. The show PJ masks has a superhero character named Gecko Boy and he's green. Too bad this color doesn't work when it comes to eating vegetables:(
Anyhow, I picked up pesto gouda and made a pesto gouda grilled cheese with a fried egg inside and a slice of tomato. It was a hit! The kids loved the color, the tomato added a little moist juicy element to the grilled cheese to counter the sprouted wheat bread I used. Of course, you can always swap out the wheat bread for regular white if you don't like the seedy texture of sprouted wheat. You can also swap out the avocado oil for butter to make this sandwich more decadent.
This sandwich also works for lunch or dinner. Pair it with some creamy tomato soup or carrot ginger. It'll hit the spot, I promise.
Pesto Gouda Sandwich with Fried Eggs and Tomato
Serves: 1 Prep Time: 5 Minutes Cook Time: 5 Minutes
8-9 thin slices of Pesto Gouda from Trader Jo’s (you will need to slice it yourself)
2 slices of High Protein Sprouted Bread (love this bread, its high in fiber, protein and low in calorie)
1 slice of beefsteak tomato
avocado oil for drizzling
salt and pepper for seasoning
Layer cheese on bread.
Heat non stick pan to high and drizzle avocado oil.
Place bread onto the pan with cheese facing up and turn to medium heat.
Let the bread brown slowly.
Cover with a lid to help make the cheese melt.
Fry your eggs in another pan to overeasy or medium well.
Once the eggs are done and the bottom of the bread is golden and crisp, remove bread and put on a cutting board.
Place a slice of tomato on one side slice of toasted bread with melted chees and season tomato with salt and pepper. Add the eggs over it and cover with the other slice of bread.
Slice diagonally and serve with fruit.
